Abstract:
The bachelor's thesis "Nutritional and toxicological evaluation of sweeteners authorized for use in the European Union" addresses the problematics of sweeteners used in foodstuffs. The work was focused on natural and synthetic sweeteners occurring in foods, their glycemic index, sweetness, nutritional aspects, metabolism, and toxicological effects on humans.
