Bakalářská práce popisuje vliv tepelné úpravy na obsah vitaminu C v zelenině. V teoretické části se zabývá vitaminem C, jeho vlastnostmi, stabilitou a účinky na lidský organismus. Dále jsou zde popsány vybrané analytické metody, prostřednictvím kterých lze vitamin C stanovit. The bachelor thesis deals with the infuence of vegetable heat treatment on vitamin C content. The theoretical part is focused on vitamin C, its chemical properties, stability and influence on human body. The next part of the thesis describes the chosen analytic methods of vitamin C (ascorbic acid) detection.
