Influence of used malts on the properties of beer

Abstract:

Práce "Vliv použitých sladů na vlastnosti piva" je zaměřena na výrobu piva v domácích podmínkách a specifikaci jednotlivých druhů sladu, které se využívají pro výrobu piva. V teoretické části jsou popsány jednotlivé suroviny, které jsou potřebné pro výrobu piva. Je zde popsána historie piva a popis jeho výrobní technologie. Dále je v práci popsán postup výroby sladu a jeho jednotlivé druhy včetně jejich rozdělení a specifik. Praktická část práce je zaměřena na přípravu vlastní receptury k výrobě vlastního vzorku piva a jeho samotná výroba. Vlastní vzorek piva byl následně srovnáván se vzorkem piva z tržní sítě. Hodnoceným vzorkem bylo pivo z pivovaru Hauskrecht. V praktické části bylo stanoveno analytické a senzorické měření daných vzorků piv. Cílem této práce bylo zjištění rozdílností u piva vyrobeného v domácích podmínkách od piva z tržní sítě. Pivo uvařené podle mé receptury bylo hodnoceno lépe skoro v každém deskriptoru, pouze u deskriptoru vzhledu a intenzity chuti bylo hodnoceno lépe kupované pivo.

Abstract:

The work of the "Influence of used malts on the properties of beer" is focused on the production of beer in domestic conditions and the specification of individual types of malt that are used for beer production. The theoretical part describes the individual raw materials that are needed for beer production. It describes the history of beer and a description of its production technology. Furthermore, the work describes the process of malt production and its individual types, including their distribution and specifics. The practical part of the work is focused on the preparation of their own recipe for the production of their own beer sample and its own production. The actual beer sample was then compared with a beer sample from the market network. The evaluated sample was beer from the Hauskrecht brewery. In the practical part, analytical and sensory measurement of given beer samples was determined. The aim of this work was to determine the differences in beer produced in domestic conditions from beer from the market network. Beer brewed according to my recipe was evaluated better in almost every descriptor, only in the descriptor of appearance and intensity of taste was the better purchased beer evaluated.
