Specifics of qvevri wine-making method
Abstract:
Tato diplomová práce pojednává o specifikách výroby vín v kvevri, která reprezentuje velmi starou technologii. Jsou zde popsány a porovnány tradiční metody výroby vín s těmi jenž jsou dominantně používány ve vinařských státech. Práce pojednává o chemickém složení vín vinifikovaných odlišnými metodami. Poznatky získané z literárních pramenů jsou komparovány s výsledky experimentální části.Abstract:
This diploma thesis discusses the specifics of qvevri wine-making method, that represents very ancient footprint of wine technology. There are described and compared traditional wine-making methods with those which are used dominantly in wine-producing countries.
