The Biogenic Amines in Fruits, Vegetables and Potatoes

Abstract:

Diplomová práce byla zaměřena na zjištění přítomnosti vybraných biogenních aminů (BA) v různých druzích zakoupeného ovoce, zeleniny a brambor. Teoretická část se zaměřuje na charakteristiku biogenních aminů, jejich výskyt v potravinách rostlinného původu a vlivy, které působí na obsah BA v rostlinných produktech. Cílem praktické části bylo stanovení konkrétních biogenních aminů metodou vysokoúčinné kapalinové chromatografie (HPLC) s UV detekcí po předchozí derivatizaci danzylchloridem. Nejvíce produkovaným biogenním aminem v potravinách rostlinného původu tohoto typu je putrescin. Nejvyšší koncentrace putrescinu se vyskytovala u citrusů, a to u mandarinky v množství 259,0?2,2 mg/kg. Druhým nejvíce produkovaným BA byl fenylethylamin, jehož množství přesahovalo u hrušky hodnoty i 50 mg/kg. Histamin a kadaverin byly u 60 vzorků ovoce i zeleniny pod 10 mg/kg.

Abstract:

This thesis examines of selected biogenic amines (BA) in various kinds of purchased fruits, vegetables and potatoes. The theoretical part focuses on the characteristics of biogenic amines, their occurrence in food of plant origin and influences that affect the BA content in plant products. The aim of the practical part was to determine specific biogenic amines by high performance liquid chromatography (HPLC) with UV detection after previous derivatization with danzyl chloride. The most produced biogenic amine in food of plant origin of this type is putrescine. The highest concentration of putrescine was found in citrus, 259.0?2.2 mg/kg for mandarin. The second most produced BA was phenylethylamine, the amount of phenylethylamine in the pear exceeded 50 mg/kg. Histamine and cadaverine were below 10 mg/kg in 60 fruit and vegetable samples.
