Abstract:
Bakalářská práce se zabývá problematikou sýrů zrajících pod mazem. Teoretická část je zaměřena na charakteristiku, technologický postup výroby a mikrobiologii těchto sýrů. Dále jsou zde popsány biogenní aminy nacházející se v těchto sýrech. V praktické části byla u jednotlivých vzorků sýrů provedena mikrobiologická analýza, kdy byly sledovány celkové počty mikroorganismů, enterobakterie, enterokoky …more
Abstract:
The bachelor thesis deals with the problematic of smear-ripened cheeses. The theoretical part is focused on the characteristics, technological process of production and microbiology of these cheeses. There are also described biogenic amines found in these cheeses.
