Hyperoxidation of must in the production of white wines

Abstract:

Tato práce se zabývá hyperoxidací moštů bílých vín, která slouží jako ochrana před další nežádoucí oxidací. Jsou zde popsány vlivy této metody na průběh celé výroby vína i na víno hotové.V experimentální části byla vyrobena dvě vína z odrůdy Veltlínské zelené. Mošty byly rozděleny na dvě části, z nichž jedna byla na začátku hyperoxidována, druhá sloužila jako kontrola. Výsledná vína se pak analyticky a senzoricky zhodnotila a porovnala. Obsah fenolických látek, hodnoty antioxidační aktivity a redukční síly vykazovaly statisticky nevýznamné odchylky hyperoxidovaného vína vůči kontrole. Naopak co se týče senzorických vlastností, bylo lépe hodnoceno víno, které bylo na počátku hyperoxidované. Lze tedy konstatovat, že záměrné dodání nadměrného množství kyslíku má pozitivní vliv na organoleptické vlastnosti vína.

Abstract:

This bachelor thesis is focused on method of hyperoxidation of must as a protection againist undesirable oxidation. The effect of this method on process of wine production and final wine is described as well. In the experimental part were made two wines from a Veltliner Green variety. A must was separated to two parts, of which one was hyperoxidated at the begining, second part was used as a control sample. The resulting wines were evaulated and compared with each other by analytical assesement and sensory analysis. Content of phenolic substances, values of antioxidant activity and reducing power showed statistically significant deviations in hyperoxidated wine to the control sample. On the other hand, the wine, which was hyperoxidated at the beginning, was evaulated better in sensory properties. In conclusion, intentional adittion of oxygen has positive influence on organoleptic properties of wine.
