Selected properties of untraditional whey-based beverages

Abstract:

Teoretická část byla zaměřena na charakteristiku hlavní suroviny a technologii výroby fermentovaných syrovátkových nápojů. Dále se práce zabývá mikrobiologickými kulturami, které jsou využívány pro výrobu alkoholických nápojů a ochucujícími složkami, které mohou být do nápojů přidávány. Praktická část byla zaměřena na výrobu fermentovaných syrovátkových nápojů v kombinaci s mrkvovou šťávou, dále na sledování vybraných fyzikálně-chemických, reologických a senzorických vlastností vyrobených modelových vzorků fermentovaných syrovátkových nápojů po dobu 42 dnů, tedy v průběhu fermentace a následně i skladování. Stanovení vybraných vlastností bylo provedeno 0., 1., 2., 3., 7., 14., 21., 28. a 42. den. Ze získaných výsledků bylo zjištěno, že vhodnější kultura pro výrobu fermentovaného syrovátkového nápoje s mrkvovou šťávou je kultura vodního kefíru, z důvodu rychlejší fermentace dané matrice. Obsah alkoholu vyrobených modelových vzorků pomocí kultury vodního kefíru překračoval 0,5 % v/v, což dané nápoje řadí mezi nízkoalkoholické nápoje.

Abstract:

The theoretical part of this diploma thesis focuses on the characteristics of the main ingredients for the production of fermented whey drinks as well as on the technology of the fermented whey beverages production. The thesis then deals with microbiological cultures, which are used for the production of alcoholic beverages and with flavouring ingredients, which can be added into drinks. The practical part of this diploma thesis focuses on the production of fermented whey -based beverages in combination with carrot juice, and on monitoring of selected physico-chemical, rheological and sensory properties of produced model samples of fermented whey drinks for the period of 42 days, which means that they were monitored during fermentation as well as the subsequent storing. The assessment of selected properties was done on the 0th, 1st, 2nd, 3rd, 7th, 14th, 21st, 28th and 42nd day. Based on the acquired results, it was discovered that the more appropriate culture for the production of a fermented whey drink with carrot juice is the culture of water kefir because of faster fermentation of the given mixture. The alcohol content of the model samples produced by the means of the water kefir culture surpassed 0,5% v/v which puts the drinks in the low-alcohol category.
