Changfes in oral pH after consumption of selected foods and meals

Abstract:

Hodnota pH v dutině ústní a její výkyvy mohou přispívat ke vzniku růz-ných nežádoucích stavů, především ke vzniku zubního kazu. Orální pH je ovlivněno různými faktory, jako například složení slin, přítomnost celko-vého onemocnění, individuální složení orálního mikrobiomu a také přijí-maná výživa. V teoretické části této práce jsou popsány informace týkající se právě možnosti ovlivnění orálního prostředí, se zaměřením na roli slin, biofilmu a sacharidové složky výživy. Součástí teoretické části této prá-ce je také popis onemocnění spojených právě s výkyvy orálního pH, jedná se o zubní kaz a eroze. Praktická část této práce se věnuje vlivu konkrétních pokrmů a po-travin na hladinu orálního pH. Cílem praktické části je zjistit, zda sku-tečně existují rozdíly v hladinách pH po konzumaci odlišných pokrmů a definovat, jak tyto výkyvy můžeme ovlivnit sami při běžném stravová-ní.

Abstract:

The value of oral pH and its fluctuations may contribute to the devel-opment of various undesirable conditions, in particular to the devel-opment of dental caries. Oral pH is influenced by various factors, such as saliva composition, presence of general disease, individual oral mi-crobiome composition, as well as the nutrition. There is information describe in the theoretical part of this paper, such as possibility of influencing the oral environment, focusing on the role of saliva, biofilm and carbohydrates as component of nutrition. Theoretical part of this paper is also dedicated to description of dise-ases associated with fluctuation of oral pH, such as dental caries and erosion. The practical part of this paper describes the influence of specific foods and dishes on the oral pH level. The aim of the practical part is to find out whether there are some differences in pH levels after eating different foods and to define how we can influence these fluctuations by changes during our nutrition.
