Arcobacter - the growth and survival in environment

Abstract:

Rod Arcobacter je považován mnoha autory za patogenní bakterie jak lidí, tak zvířat. Nicméně relativně málo je známo o jeho schopnosti přežívat v životním prostředí. Arcobacter patří do čeledi Campylobacteraceae spolu s dalšími rody jako je Campylobacter a Helicobacter. V současné době tato bakterie zahrnuje již10 druhů, šest z nich má klinický význam pro člověka. Mezi tyto druhy patří A. butzleri, A. cryaerophilus, A. skirrowii, A. thereius, A. cibarius a A. mytili. Nejběžnější výskyt tohoto mikroorganismu je ve vodě a v mase (nejčastěji drůbežím), dále byl výskyt zaznamenán i v mléce. Je třeba vzít v úvahu několik faktorů při hodnocení přežití bakterií ve vodném prostředí. Teplota může hrát významnou roli v přežití arkobakteru, stejně tak i variabilita tohoto mikroorganismu. Důležitým krokem ke snížení rizika kontaminace potravin, které ohrožuje lidské zdraví je dodržování hygieny a důkladné čištění materiálů a pracovních ploch.

Abstract:

The genus Arcobacter is considered by many authors to be pathogenic bacteria for both humans and animals. However, relatively little is known about persistence of this genus in the environment. Arcobacter belongs to the family Campylobacteraceae, along with the other genera such as Campylobacter and Helicobacter. At present, the bacteria includes 10 species. Six of them have clinical significance for humans. These species include A. butzleri, A. cryaerophilus, A. skirrowii, A. thereius, A. cibarius and A. mytili. This organism mostly occured in water and meat (mostly poultry), the incidence of Arcobacter was also recorded in milk. It is necessary to consider various factors when assessing the survival of bacteria in environments. Temperature may play an important role in the survival Arcobacter, as well as the variability of this organism. An important step in reducing the risk of food contamination that threatens human health is adherence to hygiene and thorough cleaning materials and work surfaces.
