Natural food preservatives

Abstract:

Bakalářská práce se zabývá konzervací potravin se zaměřením na přírodní konzervanty. Skládá se ze čtyř kapitol. První kapitola objasňuje, co to aditiva jsou, jak se rozdělují, z čeho se získávají, jaké jsou úkoly aditiv, a zachycuje legislativu související s nimi. V druhé kapitole jsou popsány konzervanty, základní principy konzervace potravin, rozdělení konzervantů dle původu a dle mechanismu účinku a jsou zde vyjmenovány konzervanty povolené v České republice. Třetí kapitola se zabývá přírodními konzervanty, jejich charakteristikou a jednotlivými přírodními konzervanty. Poslední kapitola je věnována zdravotním aspektům přírodních a syntetických konzervantů.

Abstract:

This bachelor thesis deals with the food preservation with focusing on the natural preservatives. It consists of four chapters. The first chapter describes the food additives (classification, fucntions) and their corresponding legislation. In the second chapter, there is description of the food preservatives, basic principles of food preservation, characterisation of food preservatives according to their origin and their mechanism of effects. Finally, the thesis is focused on the natural preservatives and their characteristicts, and on the individual natural preservatives. The last chapter is devoted to health aspects of natural and synthetic preservatives.
