Evaluation of nutritional parameters of fruits of old and regional apple varieties from extensive plantings and their recommendations for technological processing

Abstract:

Tato práce se zabývá možnostmi využití potenciálu plodů jabloní starých a krajových odrůd pocházejících z extenzivních výsadeb ve zpracovatelských technologiích. Nejprve jsou popsány způsoby zpracování jablek s přihlédnutím k nárokům na nutriční parametry plodů. Experimentální část práce je zaměřena na vyhodnocení vybraných nutričních ukazatelů plodů 10 ti zkoumaných starých a krajových odrůd jabloní. Laboratorní analýza je zaměřena na vyhodnocení obsahu titrovatelných kyselin, kyseliny jablečné, kyseliny askorbové, obsahu rozpustné sušiny, obsahu polyfenolů a hodnoty pH. Dalším zkoumaným parametrem je výlisnost. Celkové hodnocení plodů je doplněno senzorickou analýzou odrůdových moštů. Kapitola Diskuse je věnována porovnání výsledných hodnot s doporučeními pro jednotlivé zpracovatelské technologie, kterými jsou výroba moštů, ciderů, destilátů, octů a sušených plodů.

Abstract:

This work deals with the possibilities of using the potential of old and regional apple fruit varieties from extensive plantings in processing technologies. First, the methods of apple processing are described, taking into account the requirements for nutritional parameters of the fruit. The experimental part of the work is focused on the evaluation of selected nutritional indicators of the fruit of 10 old and regional apple varieties studied. The laboratory analysis is aimed at evaluating the content of titratable acids, malic acid, ascorbic acid, soluble solids content, polyphenol content and pH value. Another parameter investigated is the yield. The overall evaluation of the fruit is supplemented by a sensory analysis of the varietal musts. The discussion chapter is devoted to a comparison of the resulting values with the recommendations for the various processing technologies, which are the production of ciders, ciders, distillates, vinegars and dried fruit.
