Cílem této práce je zhodnocení, zda je projekt realizovatelný. Teoretické části práce je zaměřena na základní teoretická východiska pro tvorbu samotné koncepce restaurace. Praktická část je zaměřena na analýzu okolí podniku a možnost identifikovat hlavní vlivy, plynoucí z okolí podnik, které mohou zásadně ovlivnit provoz a dokonce i existenci podniku.
