Enzyme biosensors linked to chemometrics

Abstract:

V této bakalářské práci se zabýváme bioelektronickým jazykem. Nejdřív je popsána chuť – smysl, který je jeho inspirací. Pak jsou vice diskutovány elektronické jazyky, biosensory a využití enzymů. Také jsou popsány jejich aplikace v potravinářském, farmaceutickém průmyslu a jinde. V experimentální části práce je připraven enzymový biosensor. Získaná enzymová elektroda je pak využita na analýzu vzorků nápojů. S využitím chemometrických nástrojů na zpracování dat bylo úspěšně rozlišeno pět vzorek piva, co ukazuje schopnosti těchto systémů a příklad jejich použití.

Abstract:

In this thesis, we take a closer look at bioelectronic tongues. First, the inspiration is explored – the sense of taste. Then, electronic tongues, biosensors, and the use of enzymes are described in more detail. Their possible applications within food and pharmaceutical industries, as well as other industries, are explored. In the experimental part of the thesis, an enzyme biosensor is prepared. The obtained enzyme electrode is then used to analyze samples of beverages. Using chemometric tools to process the data, five samples of beer have been successfully distinguished, which shows the capabilities and an example of use of these systems.
