Textural properties of the pectoral and thigh muscles of chickens

Abstract:

Tato diplomová práce se zabývá texturními vlastnostmi prsní a stehenní svaloviny kuřat. K měření smykové síly metodou Meullnet-Owens Razor Shear (MORS) u kuřecích prsou a stehen byl použit přístroj Tiratest 27 025. Smyková síla u kuřecích prsních a stehenních jatečných částí sledovaných kuřat byla měřena po 7 dnech skladování při teplotách chlazení (4 °C) a při teplotách mražení (-30 °C). Nejkřehčí prsní svalovina byla stanovena u chlazeného modronohého kuřete typu Bresse (0,91 ± 0,11 N), prsní svalovina mraženého modronohého kuřete typu Bresse byla pevnější (6,49 ± 1,68 N). Nejpevnější prsní svalovina byla stanovena u chlazeného kuřete s délkou výkrmu 36 dní se selenem (12,19 ± 1,53 N), prsní svalovina chlazeného kuřete s délkou výkrmu 44 dní se selenem byla křehčí (7,20 ± 1,10 N). Nejkřehčí stehenní svalovina byla stanovena u mraženého kuřete A (0,98 ± 0,39 N), stehenní svalovina chlazeného kuřete A byla pevnější (1,51 ± 0,43 N). Nejpevnější stehenní svalovina byla stanovena u chlazeného kuřete s délkou výkrmu 44 dní se selenem (2,60 ± 0,96 N), stehenní svalovina chlazeného kuřete s délkou výkrmu 36 dní se selenem byla křehčí (1,21 ± 0,33 N).

Abstract:

The diploma thesis is aimed at textural properties of the pectoral and thigh muscles of chickens. The Tiratest 27 025 was used to measure the shear force by Meullnet-Owens Razor Shear (MORS) method. The samples of chicken breasts and thighs of the monitored chickens were measured after 7 days of storage at refrigerating temparture (4 ° C) and freezing temperature (-30 ° C). The most tender pectoral muscle was determined in chilled breast of blue-footed chicken Bresse type (0.91 ± 0.11 N), frozen pectoral muscle of blue-footed chicken type Bresse was firmer (6.49 ± 1.68 N). The toughest pectoral muscle was determined in chilled chicken with a fattening length of 36 days with selenium (12.19 ± 1.53 N), the chilled pectoral muscle of a chicken with a fattening length of 44 days with selenium was more tender (7.20 ± 1.10 N). The most tender thigh muscle was determined in frozen chicken thigh of chicken A (0.98 ± 0.39 N), the chilled thigh of chicken A was more tough (1.51 ± 0.43 N). The toughest thigh muscle was determined in chilled chicken with a fattening length of 44 days with selenium (2.60 ± 0.96 N), the thigh muscle in chilled chicken with a fattening length of 36 days with selenium was more tender (1.21 ± 0.33 N).
