Moisture sorption of blackthorn powder supplemented with polysaccharides

Abstract:

Práce se zabývá charakterizací vlastností a adsorpčního chování lyofilizovaných prášků z plodů trnky obecné s přídavky inulinu, maltodextrinu a chitosanu (5, 15, 30 a 50 % (m/m)). Charakterizace byla provedena pomocí měření barevnosti, infračervené spektrometrie s Fourierovou transformací a skenovací elektronové mikroskopie. Největší vliv na změnu barvy měly přídavky chitosanu, u kterých dosáhl parametr celkového rozdílu barevnosti ?E* hodnoty 26,90 ? 0,09. v infračervených spektrech byly u přídavků 30 a 50 % (m/m) v oblasti 1200-900 cm-1 pozorovatelné charakteristické pásy pro přidávané polysacharidy. Na snímcích ze skenovací elektronové mikroskopie byly pozorovatelné drobné rozdíly v morfologii částic (ve velikosti a tvaru okrajů). Pro matematický popis sorpčních izoterm vyhovovala nejlépe rovnice dle Knaniho. s množstvím přidaného polysacharidu klesal obsah rovnovážné vlhkosti, zejména u chitosanu a maltodextrinu, v intervalu 0,5-0,9 aw. Žádný z polysacharidů neměl vliv na zvýšení obsahu vlhkosti v první monomolekulární vrstvě ve srovnání se vzorkem bez přídavku.

Abstract:

The study focuses on the characterization of properties and adsorption behavior of freeze-dried powders from blackthorn fruits with additions of inulin, maltodextrin, and chitosan (at concentrations of 5%, 15%, 30%, and 50% w/w). Characterization was carried out using colour measurement, Fourier-transform infrared spectroscopy, and scanning electron microscopy. Among the additives, chitosan had the most significant impact on colour change, with a total colour difference parameter (?E*) reaching 26.90 ? 0.09. In the infrared spectra, characteristic bands related to the added polysaccharides were observed in the 1200-900 cm?? range for the 30% and 50% (w/w) additions. Scanning electron microscopy images revealed subtle differences in particle morphology (size and edge shape). For mathematical description of sorption isotherms, the equation proposed by Knani provided the best fit. As the amount of added polysaccharide increased, the equilibrium moisture content decreased, particularly for chitosan and maltodextrin, within the 0.5-0.9 aw range. None of the polysaccharides influenced moisture content in the first monomolecular layer compared to the sample without additives.
