Bakalářská práce se zabývá kapilární elektroforézou a hmotnostní spektrometrií, jejich principem, instrumentací, možnostmi propojení a využitím jejich spojení pro analýzu fenolických kyselin. Dále jsou zde popsány právě polyfenoly jako přírodní antioxidanty, jejich rozdělení a možnosti výskytu. This bachelor thesis deals with capillary electrophoresis and mass spectrometry, their principle, instrumentation, ways of coupling of these techniques and its use for analysis of phenolic acids. Description of polyphenols as natural antioxidants, their classification and the possibilities of occurrence are also included.
