The history of chocolate, chocolate in contemporary gastronomy

Abstract:

Historie čokolády a její postavení v současné gastronomii. [Bakalářská práce] Vysoká škola hotelová. Praha: 2015. 68 stran. Čokoláda má dlouholetou historii a je i dodneška jednou z nejoblíbenějších pochoutek. Čokoládu lze používat nejen v gastronomii, ale i v zdravotnictví a wellness službách, protože jsou známé její léčivé a uklidňující účinky. Tato práce je věnována historii čokolády, zkoumání využití čokolády (jak konzumování, tak i netradiční způsoby) a jejím účinků. V neposledně řádě se probírají možnosti rozšíření nabídky čokoládových výrobků v České republice vzhledem k zanalyzovaným preferencím obyvatelstva. Pro hlubší analýzu možností rozšíření čokoládových výrobků jsem vybrala známou společnost Ferrero. Provádím dotazníkové šetření mezi 50 respondenty s ohledem na tuto značku. K dosažení cíle práce jsem použila tyto metody: dotazníkové šetření, SWOT analýza, sekundární analýza, monitoring, literární rešerše.

Abstract:

The history of chocolate, chocolate in contemporary gastronomy. [Bachelor´s Dissertation] The Institute of Hospitality Management. Prague: 2015. 68 pages. Chocolate has a long history and is still a popular delicacy at present days. Chocolate can be used not only in gastronomy, but also in medicine, wellness, because its healing and soothing effects are known. This dissertation is devoted to the history of chocolate, examining the use of chocolate (as consuming as well as non-traditional ways) and its effect. Finally, there is discussed the possibility of expansion of chocolate products in the Czech Republic and consumer preferences. For a deeper analysis of the possible extension of chocolate products, I selected a well-known company Ferrero. There is a survey among 50 respondents with regard to the brand. To achieve the objectives are used these methods: survey, SWOT analysis, secondary analysis, monitoring and literary research.
