Assessment of the ripeness in grape varieties grown in a single locality

Abstract:

Cílem této bakalářské práce bylo sledování zrání hroznů čtyř odrůd révy vinné na jedné lokalitě. V literární části je blíže popsáno chemické složení bobule hroznu a změna složení cukrů, organických kyselin a aromatických látek v průběhu zrání. Také se tato práce zabývala seznámením s oblastí odběru vzorků.Experimentální část se zabývala vyhodnocením naměřených zralostních parametrů, tj. hmotnosti hroznu, hmotnosti deseti bobulí, mezní pevnosti bobule, obsahu rozpustné sušiny a poklesu titrovatelných kyselin a zpracováním těchto hodnot do grafů.

Abstract:

The goal of this thesis has been to observe ripening of grapes in four chosen grape varietes grown in the same locality. In the literary part has described chemical composition of grape and change of sugar content, organic acids and aromatical compounds. This thesis has dealt with introduction to area where the grapes had been collected.Experimental part has dealt with collecting and evaluation of ripeness parameters, i. e. grape weight, weight of ten grape berries, strength of the grape berry, soluble fiber content, titrable acidity and processing these parameters to graphs.
