Abstract:

UBOVIĆ, Slobodan. Gastronomické služby v nákupních centrech. [Bakalářská práce] Vysoká škola hotelová. Praha: 2015. 51 s. Hlavním cílem bakalářské práce je poskytnout přehled nabízených gastronomických služeb v nákupním centru Woluwe v Belgii a vyhodnotit spokojenost návštěvníků a zaměstnanců Woluwe centra s touto nabídkou. Informace uvedené v teoreticko-metodologické části jsou zpracovány ze sekundárních zdrojů resp. z odborné literatury a z relevantních internetových zdrojů. Pozornost je zaměřena na definování klíčových pojmů souvisejících s gastronomií a gastronomickými službami se zvláštním akcentem na klasifikaci gastronomických služeb, která slouží jako důležité vodítko při mapování struktury gastronomické nabídky ve zmiňovaném obchodním centru. Následně jsou zachyceny hlavní fáze vývoje nákupních center v USA a v Evropě, přičemž samostatná část je zasvěcena situaci v Belgii. Jejím cílem je mj. vysvětlit příčiny relativně malého počtu obchodních center v této zemi. Analytická část práce podává ucelený soubor informací o nabídce gastronomických služeb v bruselském nákupním centru Woluwe. Nejdříve je krátce představena výzkumná lokalita. Na základě osobního šetření je sestaven přehled gastronomických zařízení zahrnující také názor autora této práce na kvalitu a úroveň poskytovaných služeb v jednotlivých podnicích. Pomocí dotazníkového šetření je zjištěna (ne)spokojenost návštěvníků a zaměstnanců tohoto nákupního centra s nabídkou stravovacích služeb. Poznatky jsou využity pro návrhovou část bakalářské práce. V ní je např. doporučeno zavést speciální nabídky pro zaměstnance Woluwe, kteří jsou velkou skupinou potenciálních každodenních zákazníků. Velký potenciál skýtá také projekt bio restaurace s rozšířenou nabídkou pro děti zahrnující i dětský koutek. Závěrečná část práce stručně rekapituluje celkové výsledky práce.

UBOVIĆ, Slobodan. Gastronomic services in business centres. [Bachelor´s Dissertation] The Institute of Hospitality Management. Prague: 2015. 51 p. The main aim of my bachelor thesis is to deliver an overview of gastronomic services in a Woluwe shopping centre in Belgium and to evaluate visitor’s and employees satisfaction with this offer. Information stated in the theoretical and metodological part are compiled by secondary sources, by those are meant relevant literature and internet sources. Attention is focused on defining the key terms related to gastronomy and culinary services, with special emphasis on the classification of gastronomic services that serve as an important guide in mapping the structure of the gastronomic offer in the above mentioned shopping centre. Subsequently, the main stages of development of shopping centres in the USA and Europe are described, highlighted chapter is devoted to the situation in Belgium. Its aim, among other things, is to describe and explain reasons for relatively small number of shopping centres in the country. On the other hand the analytical part provides a comprehensive set of information on the gastronomic services offer at the shopping centre Woluwe in Brussels. Firstly, the researched location is being briefly introduced. An overview of gastronomic establishments is based on a personal survey. It also includes an opinion of the author of this thesis on the quality and level of services provided in individual ventures. Satisfaction or dissatisfaction of the visitors and the employees of a shopping centre with offered gastronomic services is detected by using the questionnaire. The findings are used for the proposed part of the thesis. In the proposed part of the thesis the author recommends to introduce a special offer for employees of the shopping centre Woluwe, who represent significant group of potential everyday customers. Enormous potential also provides project of an organic restaurant with expanded range of offer for children that also includes children's corner. The final part of the thesis briefly summarizes the overall results of the work.
