Fibrous micromycetes as producers of mycotoxins in cheeses

Abstract:

Literární rešerše bakalářské práce se zabývá problematikou vláknitých mikromycet (plísní) jako producentů mykotoxinů v sýrech. Tato práce popisuje významné rody toxinogenních plísní kontaminující sýry a nejvýznamnější mykotoxiny, které způsobují znehodnocení potravin a vážná onemocnění. Zabývá se také fyzikálními, mechanickými a chemickými způsoby boje proti nežádoucím mikromycetám, které často kontaminují nejen sýry ale i další potraviny. V praktické části bakalářské práce bylo v deseti vzorcích čerstvých, zrajících a nezrajících sýrů stanoveno spektrum vybraných mykotoxinů – citrinin, sterigmatocystin a aflatoxin M1 metodou HPLC/LC-MS. Z analýzy vyplývá, že byly shledány tři pozitivní vzorky na výskyt sterigmatocystinu a citrininu. Aflatoxin M1 nebyl v žádném vzorku detekován. Při porovnání s legislativními limity bylo zjištěno, že všechny vzorky vyhovovaly stanoveným limitům.

Abstract:

The literary research of the bachelor thesis deals with the issue of fibrous micromycetes (moulds) as producers of mycotoxins in cheeses. This thesis describes important genera of toxinogenic fungi contaminating cheeses and the most important mycotoxins, which cause food spoilage and serious diseases. It also deals with physical, mechanical and chemical methods to combat undesirable micromycetes, which often contaminate not only cheeses but also other foodstuff. In the practical part of the thesis, the spectrum of selected mycotoxins - citrinin, sterigmatocystin and aflatoxin M1 was set in ten samples of fresh, ripened and unripened cheeses by HPLC / LC-MS method. The analysis shows that three positive samples were found on the occurance of sterigmatocystin and citrinin. Aflatoxin M1 was not detected in any sample. When comparing with the legislative forms, it was found that all the reasons complied meet the given limits.
