Abstract:
Tato práce se zabývá bioaktivními látkami v kořenové zelenině. Je zaměřena na charakteris-tiku jednotlivých druhů kořenové zeleniny a na konkrétní funkce bioaktivních látek. Před-kládá podrobný přehled vitaminů, minerálních látek, chuťových, vonných a barevných látek, které jsou v kořenové zelenině obsaženy.
Abstract:
This work deals with bioactive substances in the rooty vegetables. It focuses on the charac-teristics of component type of rooty vegetables and the precise functions of bioactive sub-stances. This study covers the list of vitamins, minerals, gustatory, aromatic and color of substances which are contained in the rooty vegetables.
