Environmental and local-economic aspects of a fast - food restaurant of a classic restaurant in the Brno region: a case study

Abstract:

Práce se zaměřila na srovnání rychloobslužné restaurace McDonald´s v Brně a běžné restaurace na Brněnsku z hlediska environmentálních a lokálně-ekonomických souvislostí. Srovnala v obou provozech původ vybraných surovin pro přípravu pokrmů a zjišťovala, jací existují potencionální dodavatelé těchto surovin jednak v regionu a jednak na území České republiky. Dále se zaměřila na míru recyklace odpadů a úspor energie a okrajově také na lokální dimenzi a sociálně-ekonomické aspekty zaměstnanosti a na otázku reklamy a prostředí v obou provozech. Práce dále zjišťovala, jak jsou majitelé resp. franšízantka přístupní k alternativám, a jakou mají svobodnou vůli při rozhodování o otázkách dodavatelů a recyklace / opětovného využití odpadů. V diskusní části práce hledá důvody odlišností i podobností mezi oběma provozy. Jako významné faktory se ukazují rozdíly v celkovém objemu zpracovaných surovin i výsledného odpadu (McDonald´s jsou mnohonásobně vyšší) a vyšší závislost provozovny McDonald´s na centrálních předpisech společnosti.

Abstract:

The thesis deals with the comparison of a self-service restaurant McDonald’s in Brno and an ordinary restaurant in the Brno-region from the point of view of environmental and locally economic relationships. In both plants, it compared the origins of chosen materials for the preparation of foods and it was finding out what potential suppliers of the materials exist both in the region and in the Czech Republic. It further aimed at the rate of recycling of waste and energy savings and marginally also at local dimension and social-economic aspects of employment and at the question of advertising and atmosphere in both plants. The thesis was also finding out how open to various alternatives the owners (or the franchise owner) are and how much of free will they have when deciding on the questions of suppliers and recycling or re-using any waste. In the discussion part of the thesis the author is looking for the reasons of the differences and similarities between both plants. It shows that considerable factors are differences in materials processed and the resulting waste (in McDonald’s it is many times higher) and greater dependence of the McDonald’s plant on the central rules of the company.
