Simulation of restaurant facility

Abstract:

Bakalářská práce se zabývá navržením a nasimulováním úprav provozu reálného restauračního zařízení a následnou analýzou jejich výsledků. Hlavním cílem bylo analyzovat a navrhnout úpravy, které by vedly ke zkrácení čekacích dob zákazníků, lepšímu využití zaměstnanců a zvýšení celkové efektivity a ziskovosti provozu. K tomuto účelu byl vytvořen simulační model restaurace v softwaru SIMUL8, využívající reálná data z účetního systému restaurace. V průběhu práce byly vytvořeny tři upravené scénáře provozu: implementace digitálního objednávání, zavedení donáškové služby a zvýšení kapacity restaurace. Výsledky ukázaly, že všechny tři navrhované změny mají pozitivní vliv alespoň na jedno ze dvou hlavních kritérií. Zkrácení čekacích lhůt a zvýšení zisku. Vytvořené simulační modely a výstupy z nich mohou sloužit jako podkladky k implementaci změn v provozu restaurace.

Abstract:

The bachelor thesis deals with the simulation of proposed changes to the operation of a real restaurant and the subsequent analysis of their results. The main objective was to analyze and propose modifications that would lead to shorter queue times for customers, better utilization of employees and increase the overall efficiency a profitability of the operation. For this purpose, a simulation model of the restaurant was created in SIMUL8 software, using real data from the accounting system of the restaurant. In the course of the work, three modified operating scenarios were created: the implementation of digital ordering, the introduction of a takeaway service and an increase in restaurant capacity. The results showed that all three proposed changes had a positive impact on at least one of the two main criteria: reduced waiting times and increased profits. The simulation models and their outputs can be used to implement the proposed changes in restaurant operations.
