Utilization of differential scanning calorimetry in food processing
Abstract:
Cílem této práce je představit nejrozšířenější techniku termické analýzy a její využití v potravinářství. První část práce se zabývá samotnou technikou diferenční skenovací kalorimetrie včetně praktického nastavení DSC experimentu a jejími modifikacemi. Druhá hlavní část zkoumá její použitelnost pro studium čtyř hlavních potravinových složek ? škrobů, cukrů, tuků a bílkovin.
Abstract:
The aim of this work is to present the most widely used thermal analysis technique and its use in the food industry. The first part deal with the technique of differential scanning calorimetry including practical settings DSC experiment and its modifications . The second major section examines its applicability to the study of the four major food components - starch, sugars, fats and proteins.
