Kitchen - microbial bomb

Abstract:

Bakalářská práce se zabývá hodnocením mikrobiologické kontaminace v domácích kuchyních. Především se zaměřuje na plochy, které přicházejí do kontaktu s rizikovými potravinami. Dále se zabývá vlivem provedené sanitace na snížení mikrobiální kontaminace. Hodnocení mikrobiální kontaminace bylo prováděno metodou stěrů, pomocí testu Hygicult. Byly stanovovány celkové počty mikroorganismů, enterobakterie, bakterie E. coli, plísně a kvasinky. Stěry byly provedeny na pracovních plochách ve dvou kuchyních po přípravě syrového kuřecího masa a po sanitaci těchto ploch. Sanitace byla provedena pomocí dvou různých prostředků a byla hodnocena jejich rozdílná účinnost. Dále pak byly provedeny stěry v chladničkách, na houbičce, utěrce a umytém talíři.

Abstract:

Bachelor thesis deals with the evaluation of microbiological contamination in domestic kitchens. Especially focuses on the areas that come into contact with risky foods. It also deals with the influence by the sanitation to reduce microbial contamination. Rating microbial contamination was performed by swabbing, using the Hygicult test. Were determined by the total number of microorganisms, bacteria of the family Enterobacteriaceae, E. coli, fungi and yeasts. Samples were made on the surfaces after preparing raw chicken and after sanitizing the surfaces. Sanitation was performed using two different means and has been evaluated their efficacy varies. Furthermore, samples were taken in areas in refrigerators, on a damp sponge, tea towel and washed plate.
