Use of soy in foods

Abstract:

Tato bakalářská práce se věnuje tématu využití sóji v potravinách. Nejdříve je uvedena obecná charakteristika sóji a její pěstování ve světě a v České republice, se zmínkou o pěstování geneticky modifikované sóji. Další část práce je věnovaná složení sójových bobů z výživového hlediska, jsou zmíněny antinutriční látky a biologicky aktivní látky obsažené v sóji. Je popsán vliv konzumace sóji na zdraví člověka a také je zmíněna alergie na sóju. Dále je popsáno získávání sójového oleje a jeho složení, získávání sójového lecitinu a jeho použití v potravinách, výroba některých fermentovaných a nefermentovaných sójových potravin. Značná pozornost je věnována získávání sójových bílkovin a příklady jejich využití v potravinách. V průběhu celé práce jsou použity odkazy na platnou evropskou a českou legislativu týkající se sóji. Nakonec je stručně popsána situace sójových výrobků na českém trhu.

Abstract:

This bachelor thesis deals with the use of soy in foods. At first, the general characteristics of soy and its cultivation in the world and in the Czech Republic are mentioned, including cultivation of genetically modified soybean. The next part is devoted to the composition of soybeans from a nutritional point of view, anti-nutritional substances and biologically active substances contained in soy are mentioned. The impact of soybeans consumption on human health with a focus on soy allergies is described. Furthermore, the extraction of soybean oil and its composition, the production of soybean lecithin and its use in foods, the production of some fermented and non-fermented soybean foods are described. Considerable attention is paid to the production of soy proteins and examples of their use in food industry. Throughout the work, references to current European and Czech legislation concerning on soy are used. The situation of soy products on the Czech market is briefly described in the end of the thesis.
