Screening of Selected Bacteria Used in Dairy Industry to Degradation of Biogenic Amines

Abstract:

Bakalářská práce je zaměřena na ověření schopnosti vybraných bakterií využívaných v mlékárenském průmyslu na degradaci biogenních aminů. Teoretická část se zabývá bio-genními aminy, popisuje jejich vznik, strukturu, výskyt v potravinách a jejich možnou kon-trolu v potravinách. V praktické části byl pomocí HPLC sledován úbytek biogenních aminů, na základě půso-bení 54 kmenů bakterií rodů Lactobacillus, Pediococcus, Brevibacterium, Micrococcus a Kocuria. Redukce byla pozorována po 24 a 48 hodinové kultivaci v minerálním médiu s biogenními aminy a také v nutričně neúplném (polovičním) médiu s biogenními aminy. Experimentem bylo zjištěno, že největší schopnost degradace vykazoval kmen Lacto-bacillus casei subsp. casei CCDM 198, který byl schopen po 24 hodinové kultivaci v polovičním médiu redukovat množství putrescinu, kadaverinu a histaminu o více než 50 %.

Abstract:

The bachelor thesis is focused on the ability of selected bacteria used in the dairy industry to degrade biogenic amines. The theoretical part describes biogenic amines, their origin, structure, occurrence in food and their possible control in food. Purpose of the practical part, the loss of biogenic amines was monitored by HPLC, based on the action of 54 strains of the genera Lactobacillus, Pediococcus, Brevibacterium, Micrococcus and Kocuria. Reduction was observed after 24 and 48 hours of cultivation in mineral medium with biogenic amines and also in nutritionally incomplete (half) medium with biogenic amines. The experiment found that the biggest degradation ability was detected by Lactobacillus casei subsp. casei CCDM 198, which was able to reduce an amount of putrescine, histami-ne and cadaverine more than 50 % after 24 hours of cultivation in nutritionally incomplete medium with biogenic amines.
