A Categorization of Sichuan Cuisine and its Specific Features

Abstract:

Bakalářská práce se zabývá nedílnou součástí čínské kultury, a to čínskou kuchyní. Konkrétně je téma vymezené na oblast provincie Sichuan. Stěžejní součástí práce je kapitola obsahující korpus čínských jídel, které jsou rozřazeny do kategorií a jsou doplněny o návrh překladu a rozbor. Korpus je primárně rozdělen na základě typu pokrmů na jídla kategorie yao 肴 a jídla kategorie zhuan 馔. Potom dále podle přípravy, použitých ingrediencí a dalších kategorizačních faktorů. Další část práce obsahuje vlastnosti sichuanské kuchyně v podobě popisu vyplývajícího z kapitoly kategorizace. Obsah prakticky vyjadřuje již zmíněný kategorizovaný korpus, který posloužil nejen jako soubor nasbíraných dat, ale také jako východisko pro specifika sichuanské kuchyně z něj vyplývající. Výzkumným cílem práce bylo vnést více světla do oblasti čínské kuchyně jako regionu širokého spektra kuchyní a obsáhnout konkrétně základní členění sichuanské kuchyně.

Abstract:

This Bachelor’s thesis is focused on the undeniable part of Chinese culture which is Chinese cuisine. The topic is specifically about cuisine from the region of Sichuan province. The corpus-based chapter is a key part of the thesis and it contains dish names in categories accompanied by a description and a design of Chinese-Czech translation. The corpus is primarily divided by the types of meals into yáo 肴 meals category and zhuàn 馔 meals category. Next categorisation is due to the kind of preparation, ingredients used and other categorization factors. The other part contains the description of specific features of Sichuan cuisine according to the corpus-based chapter, so the purpose of this chapter here is not only to capture the data but also to help to indicate features of the cuisine. The research goal of this thesis was to bring more light into the vast area of Chinese cuisine and to capture the basic division of Sichuan cuisine.
