Abstract:
Tato diplomová práce se zabývá stanovením základního složení mléka a detekcí fytoestrogenních látek. Fytoestrogeny jsou sekundární metabolity rostlin, jedná se o polyfenolické nesteroidní estrogeny. Práce je především zaměřena na daidzein a jeho metabolit equol v mléce. Equol je isoflavandiol, který vykazuje estrogenní a antioxidační aktivitu, díky kterým má pozitivní účinky na lidské zdraví. Abstract:
This thesis deals with the determination of basic milk composition and detection of phytoestrogenic substances. Phytoestrogens are plant secondary metabolites that are in polyphenolic nonsteroidal estrogen category. The thesis is particularly focused on daidzein and its metabolite equol in milk.
