Traditional dishes and their replacement in the conditions of the selected region

Abstract:

Cílem diplomové práce je identifikace tradičních pokrmů v oblasti západní Moravy, zvané Horácko, oblasti na rozhraní Čech a Moravy, jejíž největší část spadá do kraje Vysočina, včetně kulturních, přírodních a dalších podmínek podílejících se na vzniku a formování těchto pokrmů. Navazujícím, sekundárním cílem je analýza vztahu veřejnosti k těmto tradičním pokrmům. V první, teoretické části jsou stručně načrtnuty širší dějiny české kuchyně a popsány historické, přírodní a geografické podmínky vybrané oblasti. V druhé, analytické části byl na základě sekundárního výzkumu sestaven referenční soubor tradičních pokrmů Horácka. Sekundární výzkum (analýza historických a etnografických pramenů a dalších písemných dokumentů) byl následně doplněn výzkumem primárním. První část primárního výzkumu byla realizována prostřednictvím dotazníkového šetření; tento kvantitativní výzkum byl orientovaný na obyvatele vybraného regionu. Druhou částí primárního výzkumu byla realizace polostrukturovaných řízených rozhovorů s obyvateli v regionu. Ta by měla napomoci zjištění, nakolik se vybrané pokrmy zapsaly do vědomí lidí. Respondenty budou osoby různého věku, kde bude zajímavé, zdali obzvlášť mladší ročníky respondentů (naroz. po roce 1989) nějaké povědomí o tradičních pokrmech vůbec budou mít. Třetí částí je návrhová část, v níž jsou prezentovány možnosti a doporučení, jak dostat tradiční horácké pokrmy více do povědomí veřejnosti a co udělat pro to, aby se tradice těchto pokrmů udržela i do budoucna.

Abstract:

The focus of the thesis is the identification of traditional dishes in the area of western Moravia, called Horácko (a region on the border of Bohemia and Moravia, most of which falls within the Vysočina Region) including cultural and natural conditions of this area, which could contribute to the origin and creation of these dishes. A secondary objective is to analyze the public's relationship to these traditional dishes. The first, theoretical part briefly outlines the broader history of Czech cuisine and describes the historical, natural and geographical conditions of the selected area. In the second, analytical part, a reference set of traditional dishes of the Horácko region was compiled on the basis of secondary research. Secondary research (analysis of historical and ethnographic sources and other written documents) was then supplemented by primary research. The first part of the primary research was carried out by means of a questionnaire survey; this quantitative research was oriented towards the inhabitants of the selected region. The second part of the primary research was the implementation of semi-structured guided interviews with residents in the region. Both of this method of primary research helped to establish the extent to which the selected dishes had become embedded in people's consciousness. The respondents were the people of different ages. It was interesting to see whether the younger age groups (born after 1989) have any awareness of traditional dishes. The third part is the proposal part, in which possibilities and recommendations are presented on how to make traditional dishes from Horácko region more publicly known and what to do to ensure that the tradition of these dishes is maintained in the future.
