Thermography studies of facial temperature after ingestion of capsaicin

Abstract:

Tato bakalářská práce se věnuje studiu vlivu kapsaicinu na změnu povrchové teploty v oblasti obličeje a krku a to za pomoci bezkontaktní infračervené termokamery. Práce je rozdělena do kapitol pojednávajících o termografii a jejím využití obecně, dále pak kapsaicinu a poslední kapitola je věnována praktickému měření a analýze termografických dat. V praktické části byla vytvořena teplotní mapa každého jednoho z dvanácti nasnímaných subjektů. Těmto subjektům bylo podáno kvantifikované množství pálivé chilli pasty a za pomoci infračervené termokamery byla snímána reakce jejich organismu. Následně byly výsledky zpracovány – byla kvantitativně zhodnocena změna teploty v určených částech obličeje a krku, vytvořeny grafy se závislostí teploty dané části obličeje na čase pro všechny subjekty současně. V diskuzi jsou pak nastíněny především možná vylepšení pro další měření. Za výsledek této pilotní studie lze považovat prokazatelný vliv kapsaicinu na povrchovou teplotu subjektů, vymezení nejvíce postižených částí obličeje a krku a také jistou korelaci nárůstu teploty při preferenci chilli u jednotlivých subjektů.

Abstract:

This bachelor thesis focuses on the study on influence of capsaicin to the change of the surface temperature on the face and neck area with the help of non-contact infrared thermal camera. The thesis is devided into three chapters dealing with thermography and its usage, the chapter about capsaicin and the chapter which is dedicated to practical measurements and the analysis of thermographic data. Temperature maps of all of twelve scanned subjects were created in the practical part of this thesis. These subjects received quantified amount of hot chilli paste and with the support of infrared thermal camera reaction of their organism was captured. After that the results were processed – the temperature in selected areas of face and neck was quantitatively evaluated, graphs with temperature of specific part of face dependence on time were created for all subjects at the same time. In the discussion some possible improvements for next similar measurement are mentioned. The result of this pilot study could be considered verifiable influence of capsaicin to the surface temperature of subjects. Definition of the most affected areas on the face and neck and a correlation between temperature rise and chilli preference for individual subjects was covered in this thesis as well.
