Inventory management in a specific company

Abstract:

Bakalářská práce s názvem „Řízení zásob ve vybraném podniku“ se zaměřuje na analyzování současného stavu zásob a na základě teoretických poznatků, vybrat vhodné použití aplikačních metod zásob. Pro naplnění cíle je nezbytné stanovit si výzkumnou otázku, při které bude zjištěno, zda podnik využívá své zásoby optimálně a efektivně. Firmou, která byla vybrána pro zpracování bakalářské práce, je společnost Pekárna IVANKA s.r.o., která se zabývá výrobou pečiva a cukrářských produktů. Teoretická práce je rozdělena do čtyř podkapitol, a každá z nich podrobně popisuje důležité pojmy, jedná se o význam zásob, řízení zásob, logistiku a vybrané metody řízení zásob. V praktické části jsou aplikovány získané teoretické poznatky. V úvodu je detailně charakterizována společnost, její dlouhodobé cíle, organizační struktura, nejvýznamnější dodavatelé a odběratelé společnosti, výrobní sortiment. Dále je popsán způsob řízení zásob ve společnosti, jejich oceňování, evidence, informační systém, výrobní program, výrobní úsek a skladování. Dále je provedena analýza současného stavu zásob, zde je pro lepší přehlednost vymezen výsledek hospodaření a celkové zásoby za posledních pět let, nechybí ani, jak si společnost vedla při světové pandemii a její ekonomický dopad na hospodaření firmy. Dále je použita analýza ABC, kde byla použita interní data společnosti. Zásoby byly rozděleny do tří kategorií podle významnosti, na nejdůležitější položky je aplikován model optimální dodávky EOQ, kde je zjištěna optimální velikost objednávky, optimální délka dodávkového cyklu a optimální počet dodávek. Získané výpočty jsou v návrhové části porovnány se skutečným stavem zásob a na základě zjištěných odchylek jsou navržena opatření. V závěru práce jsou shrnuty výsledky z celé analýzy včetně opatření.

Abstract:

The bachelor thesis titled „Inventory management in specific company“ focuses on analyzing the current state of inventory based on theoretical knowledge and the application of a suitable inventory method. In order to fulfil the objective of the thesis, it is necessary to define a research question, during which it is determined whether the company uses its stocks optimally and efficiently. The company that was chosen to be processed for the bachelor's thesis is Pekárna IVANKA s.r.o. which is engaged in the production of pastries and confectionery products. The theoretical part is divided into four subsections and each subsection describes important concepts in more detail. These terms are the meaning of inventory, inventory management, logistics and selected inventory management methods. The practical part applies the acquired theoretical knowledge. In the introduction, the company is characterized in more detail, followed by its long-term goals, organizational structure, its most important suppliers, customers and the company‘s product range. Furthermore, the method of inventory management in the company, inventory valuation, inventory records, information system, production program, production department and storage are also described. Then an analysis of the current state of stocks is made, where the result of management and total stocks for the last five years is defined for better clarity. It shows how the company performed during the global pandemic and its economic impact on its economy. Moreover, ABC analysis was created using company's internal data. The stocks were divided into three categories according to importance. The EOQ optimal delivery model is applied to the most important items, where the optimal order size, optimal delivery cycle length and optimal number of deliveries are determined. The obtained calculations are compared with the actual stock level in the design part and measures are proposed based on the detected deviations. The results of the analysis are summarized at the end.
