Kvasinky se využívají v procesech výroby různých kvašených nápojů a jídel po několik tisíc let. V současnosti je většina průmyslově využívaných kvasinek taxonomicky řazena do rodu Saccharomyces. Mnohé z těchto kvasinek mají hybridní původ a jejich vlastnosti se vzájemně mírně liší.
