Traditional ways of technological processing of fruit from extensive plantings as part of cultural heritage

Abstract:

V této bakalářské práci jsou popsány tradiční způsoby zpracování ovoce v oblasti Valašska a Bílých Karpat. Jako úvod do problematiky je popsáno extenzivní ovocnářství, možné typy výsadeb a jeho význam. Další kapitola pojednává o historii ovocnářství a na ni navazuje přehled starých a krajových odrůd pěstovaného ovoce a dále seznam minoritních druhů ovoce, které se hodí k tradičnímu zpracování. U ovocných druhů je uveden popis, historie pěstování, obsahové látky a kulturní vnímání daného ovoce. V dalších kapitolách jsou popsány tradiční způsoby zpracování ovoce. Sušení, moštování, pálení, výroba vína a povidel. V kapitolách jsou popsány technologické postupy výroby, vhodné ovocné druhy a příklady zpracovatelů a jejich produkty. V závěru práce je zamyšlení nad vývojem extenzivního pěstování ovoce a jeho zpracování v rámci našich tradic.

Abstract:

This bachelor thesis describes the traditional ways of processing fruit in the region of Valašsko and the Bílé Karpaty. As an introduction to the subject is described extensive fruit growing, possible types of plantings and its importance. The next chapter deals with the history of fruit growing, followed by an overview of the old and regional varieties of cultivated fruit and a list of minor fruit varieties that fit the traditional processing. For fruit species there is a description, history of cultivation, content and cultural perception of the fruit. The other chapters describe traditional methods of fruit processing. Drying, moistening, burning, wine making and floating. The chapters describe the technological processes of production, suitable fruit species and examples of processors and their products. The conclusion of the thesis is the reflection on the development of extensive fruit growing and its processing within our traditions.
