Epidemiologically risky food: homemade versus store-bought

Abstract:

Tato práce se zabývá epidemiologicky rizikovými potravinami a rozdíly mezi těmito potravinami domácí výroby a vyrobenými konvenčním způsobem. V teoretické části jsou popsána alimentární onemocnění, která mohou být způsobena konzumací rizikových potravin, které nebyly například správně tepelně upraveny. Dále jsou popsány vybrané epidemiologicky rizikové potraviny, které se často vyrábí i v domácnostech a jsou zde srovnány s potravinami z konvenční produkce. Teoretická část také obsahuje ,,Pět klíčů k bezpečnému stravování‘‘, které vydala Světová zdravotnická organizace. V praktické části jsou zahrnuty informace ze sběru dat dotazníkového šetření. Jedná se o souhrn znalostí dotazovaných osob týkající se výskytu a prevence alimentárních nákaz. Otázky byly také zaměřeny na získání informací ohledně konzumace domácích potravin, které se řadí mezi epidemiologicky rizikové potraviny.

Abstract:

This work deals with epidemiologically risky foods and the differences between these foods of domestic production and produced in a conventional way. The theoretical part describes food-borne diseases that may be caused by the consumption of risky foods that have not been properly heat treated. Furthermore, selected epidemiologically hazardous foods are described, which are often produced in households and are compared with conventional food. The theoretical part also includes the "Five Keys to Safer Food" published by the World Health Organization. The practical part includes information from the data collection of the questionnaire survey. It is a summary of the surveyed persons' knowledge of the occurrence and prevention of foodborne diseases. The questions were also focused on obtaining information on the consumption of domestic foods, which are among the epidemiologically risky foods.
