Abstract:

ANAPIYA, Madiyar. Komparace tří českých restaurací oceněných michelinskou hvězdou (Field, Alcron a La Degustation). [Bakalářská práce] Vysoká škola hotelová. Praha: 2018. 67 stran. Tato bakalářská práce se zaměřuje na komparaci tři českých restaurací oceněných michelinskou hvězdou (Field, Alcron a La Degustation). První část práce je věnována teoretickým základům a definicím, které se objevují v celé práci. Tato část obsahuje v sobě základní termíny z oboru gastronomie, informace o současné situaci pohostinství v České Republice, informace o mezinárodních a českých gastronomických průvodcích a nakonec detailní popis průvodce Michelin. Základem druhé části této práce, tedy analytické, je průzkum, který probíhal na základě kombinací metod pozorování, dotazování a osobního šetření. Průzkum byl rozdělen do dvou částí: první část průzkumu probíhala na základě osobního šetření sekundárních dat a také na základě osobních návštěv zkoumaných restaurací autorem práce, druhá část průzkumu se zaměřovala na získání primárních dat, a to pomoci rozhovorů s vedením restaurací. V poslední kapitole části analytické jsem se zabýval komparací restaurací na základě získaných informací z předchozích kapitol. Zároveň v této části byla potvrzená hypotéza práce a objeven přímý vztah mezi oceněním restaurací hvězdou Michelin a jejich obsazenostmi. V poslední části této bakalářské práce - návrhové, jsem poznamenal několik bodů, které vedení restaurací mohou zlepšit. Nicméně, tyto návrhy, mají ryze doporučující charakter, neboť zásadní nedostatky nebo narušení nebyly objeveny.

ANAPIYA, Madiyar. Comparison of three czech Michelin-Starred restaurants (Field, Alcron, La Degustation). [Bachelor’s Dissertation] The Institute of Hospitality Management in Prague 8, Ltd.: 2018. 67 pages. This bachelor’s dissertation focuses on the comparison of three czech Michelin-Starred restaurants (Field, Alcron, La Degustation). The first part is devoted to the theoretical foundations and definitions that appear throughout the work. This section contains basic terms of gastronomy, information about the current situation of hospitality in the Czech Republic, information about international and Czech gastronomic handbooks and finally a detailed description of the Michelin guide. The second part of this dissertation, which is analytical, is based on research, which was carried out on the basis of a combination of methods of observation, questioning and personal investigation. The research was divided into two parts: the first part of the research was based on a personal survey and also on the personal visits to the researched restaurants by the author of the work, the second part of the research focused on obtaining primary data, by means of interviews with restaurant management. In the last chapter of the analytical section I looked at the comparison of restaurants based on the information obtained from the previous chapters. At the same time, in this part of work the hypothesis was confirmed and was discovered a direct relationship between Michelin stars' award and the restaurant occupancy. In the last part of this bachelor’s dissertation, I have noted several points that restaurant management can improve. However, these proposals are of a purely recommending nature, as major deficiencies or disruptions have not been discovered.
