Předložená diplomová práce je zaměřena na studium enkapsulace kurkuminu v koloidních disperzích. Literární rešerše slouží jako podklad pro zpracování praktické části. Rešerše se věnuje kurkuminu, jako aktivní látce, která nese potenciál uplatnění v oblasti potravinářského průmyslu či farmacie. The presented Master's thesis is focused on the study of curcumin encapsulation in colloidal dispersions. Literary research serves as a basic for the elaboration of the practical part. The research focuses on curcumin, as an active substance that has the potential to be used in the food industry or pharmacy.
