Abstract:

Tato bakalářská práce se zabývá řízením kvality poskytovaných služeb v oblasti restauračních zařízení na příkladu moskevské restaurace White Rabbit. Cílem této práce je na základě provedené analýzy restaurace White Rabbit v Moskvě ohodnotit řízení kvality služeb ve zkoumaném podniku a vytvořit návrhy a doporučení, které mohou přispět ke zlepšení kvality služeb v analyzovaném gastronomickém zařízení. Bakalářská práce byla vypracována pomocí několika metod. Teoretická část prostřednictvím metody literární rešerše popisuje charakteristiku podnikání v oblasti gastronomie v Ruské federaci, zkoumá dynamiku objemu gastronomického trhu v zemi, ukazatele skutečných příjmů ruských občanů, rozdělení stravovacích zařízení podle typu, průměrné náklady na stravování v gastronomických zařízeních apod. Následně se uvádějí specifika restauračních zařízení v Rusku a probírá se význam kvality služeb v restauračních zařízeních i charakteristika jejich řízení. V praktické části práce byla provedena detailní analýza vybraného podniku. Za prvé se popisuje stručná charakteristika restaurace White Rabbit, její konceptuální stránka a podnikové procesy. Za druhé se rozebírá systém řízení kvality služeb v restauraci na základě dostupných finančních zdrojů. Za třetí se hodnotí kvalita služeb ve vybraném podniku a konkrétně kvalita obsluhování zákazníků, kvalita produkce a provádí se rozšířená analýza kvality servisu. V návrhové části práce se uvádějí návrhy a doporučení pro zlepšení kvality služeb v restauraci White Rabbit.

Abstract:

This bachelor thesis deals with quality management of services provided in the area of restaurant facilities on the example of Moscow restaurant White Rabbit. The aim of this work is based on the analysis of the White Rabbit restaurant in Moscow to evaluate the quality of service management in the company and to create suggestions and recommendations that can contribute to improving the quality of service in the analyzed gastronomic facility. The bachelor thesis was developed using several methods. The theoretical part describes the characteristics of gastronomy business in the Russian Federation through the literature search method, examines the dynamics of the gastronomic market in the country, indicators of actual income of Russian citizens, the distribution of catering facilities by type, average cost of catering in gastronomic facilities, etc. Subsequently, the specifics of restaurant facilities in Russia are presented and the importance of quality of services in restaurant facilities and the characteristics of their management are discussed. In the practical part of the thesis was made a detailed analysis of the selected company. First, the brief description of the White Rabbit restaurant, its conceptual side and business processes are described. Secondly, the quality management system of the restaurant is analyzed based on available financial resources. Thirdly, the quality of service in the selected company is evaluated, namely the quality of customer service, the quality of production and an extended analysis of the quality of service. In the design part of the thesis there are suggestions and recommendations for improving the quality of services in the restaurant White Rabbit.
