Yeasts and their biotechnological applications

Abstract:

Kvasinky jsou považovány za nejstarší mikroorganismy, které lidé využívali ke kvašení potravin a alkoholických nápojů. Technologie, které vznikly na základě těchto dávných procesů, posloužily jako základ pro současné průmyslové biotechnologie. Náplní mé bakalářské práce jsou základní poznatky o kvasinkách a jejich biotechnologickém využití. V první části je obsažena historie a obecná charakteristika kvasinek jako je například stavba, chemické složení buňky, typy reprodukce a diagnostika. Druhou část jsem věnovala popisu nejvýznamnějších druhů kvasinek a jejich uplatnění v různých odvětvích, konkrétně ve farmaceutickém, potravinářském a zemědělském průmyslu; druhá část se věnuje také patogenním druhům a jejich negativním účinkům. Tato bakalářská práce je pojata formou literární rešerše a obsahuje všechny důležité informace o kvasinkách, které mohou dále posloužit jako studijní materiál.

Abstract:

Yeasts are thought to be the oldest microorganisms used by humans to ferment food and alcoholic beverages. The technologies that emerged from these ancient processes have served as the basis for today's industrial biotechnology. The focus of my bachelor thesis is on the basic knowledge of yeasts and their biotechnological applications. The first part covers the history and general characteristics of yeast, such as cell structure, chemical composition, types of reproduction and diagnostics. The second part is devoted to a description of the most important yeast species and their applications in various industries, namely the pharmaceutical, food and agricultural industries; the second part also covers pathogenic species and their negative effects. This bachelor thesis is conceived in the form of a literature research and contains all relevant information about yeasts, which can serve as study material.
