Abstract:
Použití mikroorganizmů schopných degradace biogenních aminů nebo enzymů způsobují-cích jejich oxidaci, nabízí další příležitost, jak snížit hladiny aminů v potravinách v případech, kde je obtížné kontrolovat jejich produkci. Abstract:
Use of microorganisms able to degradation of biogenic amines or biogenic amines oxidi-zing enzymes, offers another opportunity to reduce their levels in the foods, in cases where is difficult to control their production. In the practical part of thesis were isolated 44 microorganisms with degradation activity of biogenic amines. Isolated degraders were identified by MALDI-TOF mass spectrometry. From …more
