Abstract:

Bakalářská práce se zabývá sledováním nemocničního stravování v Oblastní nemocnici Kladno. Porovnává možnosti, způsoby a rozsah stravovacích služeb pro pacienty a návštěvníky nemocnice. V teoretické části této práce se seznamujeme s formami stravování v České republice a posléze se stravováním v nemocnicích. Teoretická část obsahuje také dietní systém a druhy diet, základní složky stravy a hygienické povinnosti každého zařízení, ve kterém se manipuluje s potravinami. V analytické části se práce zabývá základními informacemi o Oblastní nemocnici Kladno. Dále na základě použitých metod, odborných rozhovorů a dotazníkového šetření jsou uvedeny specifika možností nemocničního stravování v Oblastní nemocnici Kladno. Ty jsou převedeny do grafů a okomentovány. Závěrem je provedeno vyhodnocení všech informací, které byly získány. V návrhové části této bakalářské práce jsou uvedeny návrhy a doporučení, které autorka vytvořila na základě získaných informací. Tato doporučení mohou sloužit, jako návrhy pro zlepšení stravování vybrané nemocnice.

Abstract:

The bachelor thesis deals with monitoring of hospital meals in the Oblastní nemocnice Kladno. It compares the possibilities, ways and range of catering services for patients and hospital visitors. The research question "How is catering provided to patients at Oblastní nemocnice Kladno?" In the theoretical part of this work we get acquainted with the forms of eating in the Czech Republic, their distribution and then catering in hospitals. This part also contains, the dietary system, different types of diets, categorised by their use or purpose, the basic components of the diet, which are explained and the hygiene obligations of each establishment in which food is handled. And we will get acquainted with the project, which is supported by the Ministry of Health together with the Fakultní nemocnice Olomouc, which deals with catering in Czech hospitals. In the analytical part we are dealing with basic information about the Oblastní nemocnice Kladno and the external company, which takes care of catering. Furthermore, based on the methods used, such as expert interviews and data obtained through surveys, specifics of food nutrition options at the Oblastní nemocnice Kladno, thanks to the published directly from the hospital. They are converted to charts and commented out. Finally, an evaluation of the survey is carried out. The design section of this bachelor thesis lists the proposals and recommendations that the author herself created based on the information obtained. These recommendations can serve as suggestions for positive public perception or improvement of the food nutrition of selected hospitals or meals in hospitals in our republic in general.
