The Factors affecting the quality of school meals in the specific location

Abstract:

Tato práce se zabývá faktory ovlivňujícími kvalitu školního stravování ve vybrané destinaci. V teoretické části se nejprve stručně pojednává o významu školního stravování a následně jsou definovány tři hlavní skupiny faktorů ovlivňující školní stravování a je vymezen jejich legislativní rámec. Jedná se o cenu oběda, kterou ovlivňuje kvalita a skladba surovin použitých na jeho výrobu, dále jde o kvalitu personálu školních kuchyní, se zaměřením na jeho soustavné vzdělávání, zvyšování kvalifikace a také na finanční ohodnocení, třetí faktor je vybavení školních kuchyní, se zaměřením na moderní výrobní technologie a systém HACCP nebo SHVP. Poslední kapitola teoretické části se věnuje vymezení hlavní a doplňkové činnosti školních jídelen což ovlivňuje počet vařených porcí, časovou náročnost přípravy jídel a má vliv na příjem školní jídelny. Analytická část se nejprve věnuje podpoře školního stravování se zaměřením na projekty „Mléko do škol“, „Ovoce do škol“ a projekt „Jíme s Barvožroutem“. Stěžejní část práce je věnována samotnému průzkumu, jehož hlavním cílem je zjistit, které faktory ovlivňují kvalitu školního stravování na vybraných základních školách. Proto byly definovány čtyři dílčí cíle a jim byly přiřazeny hypotézy. Pravdivost hypotéz byla ověřena průzkumem vedeným formou polostrukturovaného rozhovoru s vedoucími školních jídelen na 3 vybraných základních školách v Plzni a podrobnou analýzou jídelních lístků ve vybraném měsíci. Získané informace byly následně vyhodnoceny a výsledy průzkumu potvrdily či vyvrátily stanovené hypotézy. V návrhové části se pak pracuje s výstupy analytické části práce. Obecně lze konstatovat, že kvalita školního stravování se významně zlepšila, co se týká kvality a pestrosti používaných potravin i náročnosti připravovaných pokrmů, také obnova a modernizace provozu nečiní žádné problémy. Za problematické oblasti lze označit kvalitní a kvalifikovaný personál školních kuchyní a doplňkovou činnost školních jídelen.

Abstract:

This thesis follows up the factors that have an effect on the quality of the school feeding at the selected destination. The theoretical part first briefly discusses the importance of school feeding and then the three main groups of factors influencing the school meals are defined as well as its legislative framework. The first group of factors is the price of lunch which affects quality and the composition of the raw materials used for the meal production. The second group is the quality of staff working in the school canteen with the focus on the continuous training and improving skills as well as the financial evaluation. The third factor is the equipment of the school kitchens with a focus on advanced production technology and HACCP or SHVP systems. The last chapter of the theoretical part follows up the definition of the main and complementary activities of school canteens that affects the number of cooked meals and time spent preparing meals and has an impact on the income of the school canteen. The analytical part of the thesis looks on the support of school feeding with a focus on the following projects: "The Milk into Schools“, "The Fruit into Schools" and "Eating with Barvožrout". The main part of the thesis deals with the survey and its main objective which is to determine the factors that influence the quality of school meals in selected primary schools. Therefore four sub-goals have been defined and they have been assigned with hypotheses. The truthfulness of the hypothesis was verified through the survey conducted by means of a semi-structured interview with the heads of school canteens at three selected primary schools in Pilsen and detailed analysis of the menus in the selected month. The information gathered was then analyzed and the survey results confirmed or refuted the hypothesis. The suggesting part is working with outputs of analytical part. Generally speaking, the quality of school meals has improved significantly in terms of quality and variability of the food as well as in difficulty of the dishes. Equally, the renewal and modernization presents no problems. However, there are few problematic areas, such as qualified staff and the complementary activities of the school canteens.
