Food waste and thrift in times of economic crisis

Abstract:

Diplomová práce se zabývá plýtváním potravinami v období ekonomické krize. Na základě výsledků rešerše literatury je cílem této práce zjistit, jaké aspekty mají vliv na nižší plýtvání potravinami na venkově než ve městech v České republice. Výzkum byl uskutečněn na vzorku 19 domácností z měst a venkova, přičemž byly využity dvě metody kvalitativní analýzy – záznamové archy a navazující hloubkové rozhovory. Z výsledků vyplývá několik významných aspektů ovlivňujících nižší plýtvání venkova, kdy mezi hlavní aspekty patří zejména větší možnosti skladování potravin, které zabezpečují delší zachování jejich kvality, nebo také specifické praktiky vyhazování, kdy jsou vyřazené potraviny na venkově využívané jako krmivo pro zvířata. Aktuální situace spojena s krizí je více citelná ve městech, kdy se respondenti snaží o větší šetrnost. Závěr práce obsahuje doporučení pro organizace zabývající se udržitelností nebo zmenšením potravinového odpadu měst, pro které by tato práce mohla být přínosná.

Abstract:

The diploma thesis deals with food waste during the economic crisis. Based on the results of a literature review, the goal of this thesis is to find out what aspects have an impact on lower food waste in rural areas than in cities in the Czech Republic. The research was performed on a sample of 19 urban and rural households, using two methods of qualitative analysis – record sheets and in-depth interviews. The findings show several important aspects influencing lower rural waste, when the main ones are greater food storage options, which ensure longer quality of food, and specific practices of throwing out, when thrown rural food is used as animal feed. The current situation connected with the crisis is more noticeable in cities, where respondents are trying to be more frugal. The conclusion of the thesis contains recommendations for organizations dealing with the sustainability or reduction of food waste in cities, for which this thesis could be beneficial.
