Heavy Metals in Wine

Abstract:

Tato diplomová práce se zabývá stanovením obsahu 20 kovových prvků ve 3 odrůdách vína, přičemž jedno z nich je produktem ekologického vinohradnictví, jedná se o bio víno Malverina. Obsah kovů je sledován v závislosti na použitých pesticidech. U dvou odrůd, Ryzlinku Rýnského a Rulandského bílého, je tedy znám druh a složení použitých pesticidů. Cílem práce je posouzení vlivu užití pesticidů při pěstování révy vinné na koncentraci kovů ve víně a případné nalezení dalších možných vlivů, které mohou ovlivnit přítomnost kovů ve víně. V neposlední řadě porovnání obsahu kovů mezi jednotlivými ročníky vína. Vzorky byly nejprve podrobeny mikrovlnnému rozkladu a následná analýza byla provedena metodou hmotnostní spektrometrie s indukčně vázaným plazmatem. Z výsledků je patrné, že žádná koncentrace stanovovaných kovů nepřekročila limit určený legislativou. Lze po-dotknout, že na koncentraci kovů v těchto vínech má vliv zejména geologické podloží, ale do jisté míry také použití ochranných prostředků a hnojiv.

Abstract:

This thesis deals with the determination of the content of 20 metal elements in 3 varietes of wine. The eco wine Malverina i sone of them. Depending on used pesticide sis monitored the content of metals. In two varietes (Riesling and Pinot Blanc) its known which tipes of pesticides and their composition have been used. Evaluate the infuence of pesticides on the concentration of metals in the wine and to find other possible influences, which can affect the presence of metals in the wine is the aim of this thesis. Last but not least, to observe the possible different metal content between diffe-rent vintage. The samples were subjected to microwave decomposition at first and subsequent analysis was performed by inductively weighted plasma mass spektrometry. The concentration of the specified metals did not exceed the legal limits according to results. The concentration of metals in these varieties of wine is mainly influenced by the geological subsoil, but also it can be influences by the use of pesticides and fertilizers, it can be stated. The concentra-tion of specified metals over the years hase been no significant changed.
