Modification of Legumes Leading to the Degradation of Flatulent Alpha Galactosides
Abstract:
Bakalářská práce se zabývá luštěninami, kde první část je věnována jejich druhům a cha-rakteristice, v druhé části je popsáno chemické složení a vyzdvižen nutriční význam lusko-vin. Závěrečná část se zaměřuje na úpravu luštěnin pro odbourání flatulentních alfagalak-tosidů pro lepší stravitelnost ve výživě člověka.Abstract:
The aim of this bachelor's work were legumes. The species and characteristics of legumes were describe in the first part. The chemical composition and nutritional importance of legumes was describe in the second part. The treatment of legumes for the reduction of alpha-galactosidase flatulence for better digestibility in human nutrition was describe in the final part of this thesis.
