Glossary of Spanish Gastronomy

Abstract:

The aim of this thesis was to put together the corpus of denominations of food that is usually found in the Spanish gastronomy. This work is divided in two parts, theoretical and practical. Due to the possibility of comparison we added some typical foods from Czech cuisine. In the theoretical part we focus on the meaning of lexicology and lexicography. We paid attention to the specific terminology which is used in gastronomy. We also focus on word-formation and specificities of the language of tourism. In the practical part we analyzed food located both in diccionaries and in the recipes. On the basis of this analysis we put together a glossary of gastronomical terms. A glossary is divided in seven parts. In some terms we added some explanation in Spanish language. On the basis of our research we came to the conclusion from which languages the denomiantions of Spanish food are recieved. These findings are completed by diagrams with the convenient comment.

Abstract:

Cílem této práce bylo sestavit korpus názvů jídel, které se běžně vyskytují ve španělské gastronomii. Práce se dělí na dvě části, na část teoretickou a praktickou. Pro možnost porovnání jsme přidali několik typických jídel z české kuchyně. V teoretické části se zabýváme významem lexikologie a lexikografie. Velkou pozornost jsme věnovali odborné terminologii se změřením na specifika gastronomie. Také se zabýváme slovotvorbou a vymezením specifik jazyka cestovního ruchu. V praktické části jsme provedli analýzu jídel vyskytujících se jak ve slovnících, tak v různých receptech a na základě této analýzy jsme sestavili glosář gastronomických pojmů. Glosář jsme rozdělili do 7 kategorií. U některých názvů jsme doložili vysvětlení ve španělském jazyce. Na základě našeho výzkumu jsme došli k závěru, z jakých jazyků jsou přejímány španělské názvy jídel. Tyto poznatky jsme doplnily o grafy s následným komentářem.
