Nutritional aspects of new trends in gastronomy (case study)

Abstract:

The aim of this is to analyze specifics of the approaches to cooking meat and fats in chosen restaurants and to suggest possibilities for improving the processing of macronutrients. In the theoretical-methodological part the basic components of food (micronutrients and macronutrients) are described and fats and meat as a source of protein are described further. For a better understanding and perspective of the topic importance, the reader is informed of the theme of eating habits. Nutritional recommendations, eating styles are described as well as the impact of cooking on nutrients and the most common illnesses related to it. The manners of chosen restaurants are described and evaluated after obtaining primary and secondary data from observations and structured interviews. The data primarily concern the manners of working with fats and meat. Ways of cooking are recommended in the third part of the theses that are suitable and favorable to maintaining the nutritional values of fats and meat. Following the suggested recommendations it is possible to avoid cancerous illnesses and the formation of undesirable substances.

Abstract:

Cieľom diplomovej práce je analyzovať špecifiká postupov tepelnej úpravy mäsa a spôsoby tepelnej úpravy tukov vo vybraných reštauráciách a navrhnúť možnosti zlepšenia práce so zvolenými makroživinami. V teoreticko-metodologickej časti práce sú popísané základné zložky stravy (mikroživiny a makroživiny), z ktorých je detailnejšie spracovaná časť pojednávajúca o tukoch a o mäse, ako o zdroji proteínu. Ďalej sú opísané výživové doporučenia pre obyvateľstvo, základné výživové štýly, vplyv tepelnej úpravy na vlastnosti živín a najčastejšie ochorenia vznikajúce z chybného stravovania. V druhej časti diplomovej práce je analyzovaných päť, pre výskum vybraných reštaurácií. Na základe primárnych a sekundárnych dát získaných pozorovaním a semi-štrukturovaným rozhovorom je zhodnotené ich chovanie a hlavne ich spôsob zaobchádzania s tukmi a mäsom. V tretej časti práce sú navrhnuté spôsoby tepelnej úpravy, ktoré sú vhodné a šetrné k nutričnej stránke živín, obsiahnutej v tukoch a mäse. Dodržaním navrhnutých postupov je možné eliminovať vznik nádorových ochorení a iných nepriaznivých látok a zlúčenín.
