The effect of hardness of water on various physicochemical properties of elecampe root infusion

Abstract:

Diplomová práce se zabývá sledováním vlivu tvrdosti na fyzikální a chemické vlastnosti nálevu z kořene omanu pravého. V teoretické části je práce zaměřena zejména na popis a využití omanu v lékařství, dále na definice ohledně tvrdosti vod, vliv pH na významné složky kořene a popis použitých technik při experimentální části. V praktické části byly připraveny nálevy z kořene omanu pravého do vody s různou tvrdostí. Ve vzorcích byla změřena barevnost, pH a byly stanoveny antioxidační aktivity metodou DPPH a FRAP, chelatační aktivita, a celkového obsah fenolických látek, flavonoidů a katechinů. Dále byla změřena infračervená spektra nálevu. Vzorek kořene byl podroben analýze minerálních látek pomocí ICP/MS. Byl potvrzen předpoklad, že pH má vliv na barvu a antioxidační vlastnosti bylinných nálevů.

Abstract:

This diploma thesis deals with the effect of hardness of the water on the physical and chemical properties of oman root infusion. The theoretical part describes medicinal properties of oman, water hardness, and techniques used in the experimental part. In the experimental part, oman infusion was prepared in water with various harndess levels. Colour, the pH, antioxidant activity in terms of DPPH and FRAP, chelating activity, as well as total phenolic, flavonoid, and catechin contents were determined. The main functional groups present in the infusion were evaluated by infrared spectroscopy. The mineral content of oman root was determined by ICP/MS. The pH level was indentified as the probable factor that infuenced the colour of the infusion.
