Use of fumaric acid to inhibit malolactic fermentation in white wines

Abstract:

Diplomová práce se zabývá schopností kyseliny fumarové inhibovat bakterie mléčného kvašení. V literární části jsou popsány jednotlivé kmeny bakterií mléčného kvašení. Dále popisuje jejich metabolismus a faktory ovlivňující bakteriální růst. V literární části je dále obecně popsána kyselina fumarová, jsou popsány metody její výroby a účinky kyseliny fumarové na víno. Experimentální část je zaměřena na inhibování mléčných bakterií pomocí kyseliny fumarové. Byly provedeny pokusy na odrůdě Souvignier gris. Byly použity metody sledování růstových křivek, diskové difuzní metody a pokusy na mikrovzorcích v kontrolovaných podmínkách. Další pokusy experimentální části byly zaměřeny na neošetřené prostředí školního sklepa a implementace kyseliny fumarové do vinařské výroby. Byly provedeny pokusy na odrůdě Hibernal, kde byla přidána dávka schopná inhibice malolaktické fermentace. Byla provedena HPLC analýza a senzorická analýza. Výsledky byly statisticky vyhodnoceny a prokázaly účinnost kyseliny fumarové.

Abstract:

The thesis deals with the ability of fumaric acid to inhibit lactic acid bacteria. The literature section describes the different strains of lactic bacteria. It also describes their metabolism and factors affecting bacterial growth. The literature section also provides a description of fumaric acid, its production methods and the effects of fumaric acid in wine. The experimental part focuses on the inhibition of bacteria by fumaric acid. Experiments were carried out on the Souvignier gris variety. Growth curve monitoring, disk diffusion methods and micro sample experiments were used under controlled conditions. Other experimental part of the trials focused on the untreated environment of the school cellar and the implementation of fumaric acid in winemaking. Experiments were carried out on the Hibernal variety, where a dose capable of inhibiting malolactic fermentation was added. HPLC analysis and sensory analysis were carried out. The results were statistically evaluated and demonstrated the efficacy of fumaric acid.
